Anasazi is the Navajo word for “the ancient ones,” the cliff-dwelling Native Americans who lived in Colorado, New Mexico, Utah, and Arizona around 130 AD. It's said that the beans were found in the 1900s in the ruins of their dwellings, but more likely, they've been grown continuously since ancient times. Anasazi beans turn pale pink when cooked. They are slightly sweet with a meaty texture, and are ideal for baked beans,  Tex-Mex fare, and for serving with rice. Use them like pintos.
