Sweeter, richer and perhaps easier on the tummy than pinto beans, the bolita ("little bullet") bean is said to have been cultivated and developed by the Spanish who settled in northern New Mexico. This pretty, salmon-pink bean quickly became a staple in the Southwest. Bolitas cook fast, mash well and can substitute for pintos in any recipe.
