Garbanzo

Whether they're called chickpeas or garbanzos, everyone knows this bean that's the base of hummus, the puree of beans, tahini, olive oil, lemon juice, and garlic. In Morocco, they make delicious stews of garbanzos with vegetables, and in India, they roast the cooked beans with oil or ghee and traditional spices to make a crunchy snack. Garbanzos are also a great filling for pita sandwiches.
