Yellow Eye

Use Yellow Eyes, with their mild flavor and creamy texture, anywhere you'd use Great Northern beans. They're a terrific casserole bean and make superb New England-style baked beans. They also make a creamy, satisfying bean soup. Cooked beans maintain their markings, although the color changes somewhat.
